Natuf wanted to be the name people think of first for real Levantine and Middle Eastern food in India. Not a side note on a menu. Nobody wants to be the third name on a "Middle Eastern food near me" search. Natuf wanted to be the first one people think of, full stop. Not a tab they close after scrolling past five other options that all look the same. What does authentic actually mean to a Bengaluru audience that's tried plenty of "Mediterranean" food but maybe not much real Levantine cooking? Where's the line between staying true to the cuisine and being accessible enough that a first-timer doesn't feel lost on the menu? We built the positioning around that gap. Natuf wasn't going to compete on novelty. It was going to win on being unmistakably, unapologetically the real thing — and make sure everyone who walked in knew exactly what they were getting.
