There's a number going around that should make every menu planner in the country sit up: idli demand is climbing 60% year on year on social — and almost nobody's menu reflects it. Same story with spicy claims, up nearly 73%. The crowd is shouting what it wants. Most menus are still politely whispering "mild, medium, or extra mild" back at them.
